BBQ and Jalapeno Shrimp

I got ambitious tonight and made my own bbq sauce, but you can certainly use your favorite variety from a bottle.  Add to the shrimp one of

BBQ and Jalapeno Shrimp

Ingredients:

- 6 large shrimp, peeled and deveined
- 1 jalapeno, cut into long slices
- 3 slices bacon
- 1 c. fresh peas
- 1/2 c. bbq sauce
- 1 T. butter (optional)
- salt
- pepper

Season the shrimp lightly with salt and pepper.  Stuff the back of the shrimp with the jalapeno slices, then wrap each shrimp with 1/2 slice of bacon.  Making sure to secure the end of the bacon slice, slide the shrimp onto a skewer.  Note:  Run the skewers under water or soak them to make sure they don't burn when you are cooking.  Using a pastry brush, smear bbq sauce onto each skewer and put them on your grill/grill pan. 

Bring a bit of water to a boil in a small, shallow pan.  Add the fresh peas, removed from their shells, or use frozen peas.  Cook the peas for 3-4 minutes so that they retain a slight bite. 

Turn the shrimp skewers after 3-4 minutes; the bacon should be crispy.  Baste again with bbq sauce as desired. 




Homemade BBQ Sauce

Ingredients:

- 1 slice of bacon
- 1 thyme bundle
- 1/2 onion, finely chopped
- 2 c. ketchup
- 1/3 c. brown sugar
- 1/3 c. molasses
- 2 T. white vinegar
- 2 garlic cloves, minced
- 1 tsp. cumin
- 2 T. hot sauce
- salt
- pepper
- olive oil

In a medium pot, let the bacon slice cook until crisp.  If needed, add a bit more oil and add the onion.  Season with salt.  Soften the onion for ten minutes, then add the garlic.  Cook for an additional minute.  Add the rest of the ingredients and simmer for 25-30 minutes.  Remove
