I'm back Grilled Pita Sandwich

I'm back from a week of travel for work, and the cauliflower I roasted last week just keeps giving.  Not only did I share the cauliflower hummus with my coworkers, now I have the base for a yummy sandwich.

Grilled Pita Sandwich

Ingredients:

- 2 T. cauliflower hummus
- 2 T. leftover olive relish
- 1 oz. crumbled feta
- 1 roma tomato, sliced
- handful mixed greens
- 1 pita pocket, cut in half
- 1/4 onion, thinly sliced
- 3 mushrooms, sliced

On a grill pan drizzled with olive oil, sautee the mushrooms while you assemble the sandwiches.  Smear the inside of each half with the hummus and olive relish.  Lay in the onion, tomato and greens, and sprinkle with the cheese.  Spoon the mushrooms into the pita halves; transfer the sandwiches to the grill pan to heat through as you would a grilled cheese sandwich.  Brown on each side for 1-2 minutes.
