Mini Broccolini and Asparagus Lasagna

Hmmmm.... What are the worst things ever to be craving when you are trying to cook for one person?  I vote meatloaf and lasagna.  I'm still puzzling over how to make a one-person meatloaf (wait... I do have those mini-loaf pans...ooh!), but tonight I figured out how to make lasagna for one person.

Mini Broccolini and Asparagus Lasagna


Ingredients:

- 2 lasagna noodles
- 1/2 c. asparagus, cut into bite-size pieces
- 1/2 c. broccolini, cut into bite-size pieces
- 1 garlic clove, minced
- pinch crushed red pepper
- 1/2 c. marscapone cheese
- 1/4 c. parmesan cheese
- 1/4 c. basic red sauce (I had some leftover)

Bring a large pot of water to a boil.  Salt the water liberally and add the lasagna noodles.  Cook them to just shy of al dente, as they will continue to cook in the oven.

Preheat the oven to 350 degrees.

Bring a smaller pot of water to a boil and salt the water.  Add the broccolini and asparagus and cook for 2 minutes.  Shock them in ice water to stop the cooking process.  Transfer the veggies to a bowl, and add the garlic, crushed red pepper and two cheeses.  Season lightly with salt and pepper.  Mix to combine.

Spray a small, round casserole or baking dish (I had a 4"-diameter casserole dish) with cooking spray, or coat with butter or oil.  Lay the two noodles in an "x" and let them hang over the sides.  Spoon half of the cheese mixture into the bottom.  Fold two opposite flaps of the noodles over the cheese mixture, creating a layer.  Spoon the rest of the cheese mixture into the center, and cover the top by folding the other noodles over.  Spoon the tomato sauce over the top.  Cover with aluminum foil and bake for 35-40 minutes.

Remove the foil and top with parmesan cheese.  Return the dish to the oven for another 10 minutes.  Voila!  Your own, personal lasagna.
