One Dish Breakfast Hash

Ingredients:

- 1 roma tomato, sliced
- 2 small red potatoes, diced
- 1/4 onion, diced
- 1/4 bell pepper, diced
- 2 T. pesto
- dash hot sauce
- 1 egg
- olive oil
- salt
- pepper

In a small skillet, heat a light layer of olive oil and add in the potatoes.  Season with salt and allow to crisp on all sides, approximately 5 minutes.  Add a light layer of water to speed the cooking process and allow it to evaporate.  Add another drizzle of olive oil, and add the onion and bell pepper.  Season again lightly, and let the veggies soften; approximately 7-8 minutes.  Add the hot sauce and pesto, and stir to combine.  Transfer to a plate. 

In the same skillet, lay down the tomato slices and cook for 1 minute on each side.  Fan them out over the potatoes.  Crack one egg into the skillet and let the white turn opaque before flipping the egg.  Lay the over easy egg on top of the tomatoes.  Season with salt and cracked black pepper.
