Roasted cauliflower spread

I was going to make traditional hummus, but then realized that I could use some of the roasted cauliflower I had leftover to make a yummy spread.

Roasted Cauliflower "Hummus"


- 1/2 head of cauliflower, cut into florets and roasted
- 2 T. tahini
- 3 cloves garlic
- 1/4 c. olive oil
- salt
- pepper
- fresh parsley
- fresh thyme
- 1 lemon, zested and juiced

Combine all elements except the oil and water in a food processor.  Puree until smooth.  Slowly add the oil as it continues to puree.  Add in water to achieve the consistency you desire.

And yes... the large container is what I kept for myself.  The small container is what I brought to the office to share.  Come on... my yummy spread is going to be the base of oodles of sandwiches.  For the time being, dip pita bread or fresh veggies into it.
