Three Bean Salad

Since I'm returning to an office job and need to make lunch to take with me to work, and, well, I had to use the beans in my fridge!  This salad is a great side to sandwiches, or used on salads.  It basically creates a dressing for greens and whatever else you want to add.

Three Bean Salad


- 1 14.5-oz. can kidney beans, rinsed
- 1 c. green beans, cut into 1/2-in. pieces
- 1 c. wax beans, cut into 1/2-in. pieces
- 1/4 red onion, cut into slices
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1/4 c. red wine vinegar
- 1/2 c. water
- olive oil
- salt
- pepper

Mix all of the ingredients together in a container.  Add enough olive oil to cover the beans and onions.   Mix thoroughly and store in the fridge.
