White Bean Ragu, Take Two

I was so taken with my lazy brunch baked egg that I decided to turn my bean ragu into a fabulous weekend lunch/breakfast/brunch meal.

Ingredients:

- 1/2 c. reserved white bean ragu
- 1/4 c. tomato sauce
- 1 egg
- 1 tsp. reserved pesto

Preheat the oven to 400 degrees.

Spoon the white bean ragu into a shallow individual baking dish.  Spoon the tomato sauce on top.  Create a slight well in the middle, then crack the egg into the well.  Spoon the pesto into the white part of the egg and transfer to the oven.  Cook for 12-15 minutes, or until the white of the egg is opaque.  Enjoy your weekend morning in!
