Lazy Tuna and White Bean Pasta

It's Thanksgiving week, so in light of all of the other cooking I did all week, and the amazing amount of leftover food to consume, this was an easy pantry meal.  Plus, the leftovers are going to be lunch for a few days in the office.

Lazy Tuna and White Bean Pasta


- 1 can tuna
- 1 14.5-oz can white beans
- 1/2 red onion, chopped
- 2 ribs celery, chopped
- 2 c. cooked pasta of your choice (I used miniature shells)
- 1/4 c. olives, chopped
- 1/4 c. sweet pickle relish
- 1/4 c. red wine vinegar
- 1/4 c. greek yogurt
- 1/4 c. extra virgin olive oil
- flat-leaf parsley, chopped
- salt
- pepper

Combine all ingredients and season to taste.  That's it!
