Thanksgiving Benedict

I love turning Thanksgiving leftovers into other meals.  Of course, yesterday I just ate cold dressing out of a storage container.  Today, I'm going to change it up a little bit.

Thanksgiving Benedict


- 3/4 leftover dressing
- 1/2 c. turkey, diced
- 1 egg
- 2 T. white vinegar
- 1/4 c. creme fraiche (or sour cream)
- 1 T. horseradish
- handful of flat-leaf parsley, chopped
- 1/2 lemon, juiced
- salt
- pepper

Bring a pot of water to a boil.

While the water is coming to a boil, prepare a horseradish cream sauce by mixing together the creme fraiche, horseradish, parsley, lemon juice, salt and pepper.  Set aside.

Add the vinegar to the water, and crack the egg into the water.  Let it gently poach for approximately five minutes.

Form the stuffing into a pancake and heat it through in a skillet.  Plate the pancake, top with the turkey, egg, and finally the horseradish cr
