Butterscotch Bars

Oh, the weather outside is frightful....  Yes.  I totally am in the Christmas mood.  This is the first baked goodie of the season, compliments of Anne Burrell's recipe from Food Network.

Butterscotch Bars


- 2 sticks butter, cut into small cubes, at room temperature
- 2 c. flour
- 1 1/2 c. oats
- 3/4 c. brown sugar
- pinch salt
- 1 tsp. cinnamon
- 1 11-oz. bag butterscotch chips
- 8 oz. cream cheese, at room temperature
-  1 14-oz. can sweetened condensed milk
- 1 lemon, zested and juiced
- 1 tsp. vanilla extract.

Preheat the oven to 350 degrees.  Spray a 9 by 13" pan with cooking spray, then lay a piece of parchment paper on top.

In a food processor, add the flour, oats, brown sugar, and salt, and pulse to combine.  Add in the butter, cinnamon and butterscotch chips.  Pulse until it starts to form into clumps.  Press half of the mixture into the bottom of the pan.  Bake that layer for 12 minutes, then let cool completely.

Mix together the remaining ingredients in a stand mixer or with a hand mixer:  the cream cheese, milk, lemon zest and juice, and vanilla.  Pour it over the bottom crust, then sprinkle the rest of the oat mixture over the top.  Bake until golden, 40-45 minutes.

Let cool completely, then cut into squares.
