Farro Salad

This is an amazingly hearty way to eat at the office and feel like you're getting a great amount of nutrition.  I totally admit, when I brought this for lunch, I had a packet of instant oatmeal for breakfast, and then a nut/fruit snack around 4 to see me through to dinner.  Still, a nice alternative to the slimy salad bar downstairs.

Farro Salad for the Office


Ingredients:

- 3/4 c. of farro, cooked according to instructions (if you don't have farro, try for wheatberries, or even an        Israeli cous cous or orzo)
- 1/4 green bell pepper, diced
- 1/4 red bell pepper, diced
- 1/4 yellow bell pepper, diced
- 1 rib celery, diced
- 1/8 red onion, diced
- handful flat-leaf parsley, chopped
- half of a palmful of raisins
- splash of vinegar of your choice (I used red wine)
- 1 orange, juiced
- 1/4 c. olive oil
- salt
- pepper

Mix together the farro, peppers, celery, onion, parsley, and raisins.  In a small bowl, whisk together the orange juice, salt, pepper, and splash of vinegar.  Slowly whisk in the olive oil.  Toss together all of the ingredients, and add in the dressing.
