Fried Eggs and Hash

More Sunday morning fun!  I just successfully completed the Sunday crossword puzzle and had a cup of coffee, and now I'm ready for a hearty breakfast.

Fried Eggs and Hash


- 2 eggs
- 2 small potatoes, diced
- 1/4 onion, diced
- 4 mushrooms, stems removed and diced
- 2 T. cream
- dash hot sauce
- 2 T. butter
- salt
- pepper
- flat-leaf parsley for garnish

In a small frying pan, add the olive oil.  Add the potatoes and let them start to crisp up; about 6-7 minutes.  Add in the butter, then the onion and mushroom.  Allow to cook for another 5 minutes, then season with salt. When the potatoes are cooked through, add in the cream and hot sauce and season with pepper.  Let the mixture thicken for 1-2 minutes.  Set aside and let it continue to thicken off of the heat while you fry your eggs.

No magic here:  Just crack two eggs into a skillet sprayed with cooking spray.  Let them cook until the egg whites are almost cooked through, then flip.  Don't worry if the yolks break.  Plate the hash, and top with the eggs.  Season the eggs with a pinch of salt and pepper and garnish with the parsley.
