Pecan Chocolate Pie

If you're in a pinch, grab a prepared pie crust from your local market.  If not, then make a quick and easy pie dough.  Refrigerate the dough for at least four hours before you roll it out and line the pie pan.

Chocolate Pecan Pie


- 1 uncooked pie crust
- 3 c. pecans
- 3 T. butter, melted
- 3 eggs, beaten
- 1/2 c. dark corn syrup
- 1 c. sugar
- pinch salt
- 1 c. chocolate chips

Preheat the oven to 375.

Line the bottom of the pie crust with the pecans.  Sprinkle the chocolate chips over the pecans.  Whisk together the eggs and butter and add in the pinch of salt.  Add in the corn syrup and sugar and whisk until combined.  Pour the mixture over the pie.

Bake the pie for 30-35 minutes or until the caramel mixture is no longer jiggling.  Sorry no picture, but it got devoured before I could snap one!
