Prosciutto-wrapped Vegetables

I love prosciutto and am so tired of prosciutto and canteloupe being served over and over again.  Here, combine the crunch of some fresh vegetables with prosciutto for a tasty alternative.

Prosciutto-wrapped Vegetables


- 6 oz. of thinly-sliced prosciutto
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 green pepper, thinly sliced
- 1/3 lb. of broccolini
- olive oil
- 1/2 lemon, juiced

Lay three sheets of prosciutto on a cutting board, slightly overlapping.  Cut them in half.  Lay either a piece of the broccolini or a combination of the three colorful peppers at one end of the prosciutto.  Gently roll up the bundles.  Alternate them on a platter, and drizzle with olive oil and a squeeze of lemon juice.
