Roast Beef Bruschetta

I love serving a wide array of appetizers at any gathering of friends.  I don't have the space to have a big group over for dinner, but enjoy having small groups over for movies, a game, or just to hang out.  These toasts are yummy and hearty- your guests will leave sated without the burden and space needs of serving a full seated dinner.

Roast Beef Bruschetta


- 4 oz. roast beef
- 4 radishes, thinly sliced
- 1 baguette, sliced
- 1/4 c. creme fraiche (or sour cream)
- 1 T. horseradish
- handful of flat-leaf parsley, chopped
- 1/2 lemon, juiced
- salt
- pepper
- olive oil

Preheat the oven to 350 degrees.

Prepare a horseradish cream sauce by mixing together the creme fraiche, horseradish, parsley, lemon juice, salt and pepper.  Set aside.

Scatter the toasts on a baking sheet and drizzle with olive oil.  Season with salt and cracked black pepper.  Toast them in the oven for about 5 minutes.

Top the toasts with a dollop of the horseradish cream, followed by a few slivers of roast beef and slices of radish.
