Roasted Beet Bruschetta


- 1 baguette, sliced
- 3 beets, leafy ends chopped off
- 3 clementines, segmented
- 4 oz. goat cheese
- salt
- pepper
- olive oil

Preheat the oven to 350 degrees.

On a baking sheet or glass baking dish, scatter the beets.  Drizzle with olive oil and roast the beets for approximately one hour.  Pull them out of the oven.

Scatter the toasts on a baking sheet and drizzle with olive oil.  Season with salt and cracked black pepper.  Toast them in the oven for about 5 minutes.

Remove the skins from the beets and dice them.  Warning: Beets will stain your hands and a wooden cutting board.  Chop them into small chunks.

Top each toast with a smear of goat cheese, a sprinkling of beets, and a few of the clementine segments.
