Shrimp Ceviche

I love ceviche, and for entertaining, it's a perfect dish to make a day or even two ahead.  The seafood needs time to marinate in the citrus juices to mimic the cooking process.

Shrimp Ceviche


- 3/4 lb. shrimp, peeled and deveined, then chopped
- 1/2 red onion, diced
- 2 cloves of garlic, minced
- 1 jalapeno, seeds and ribs removed, finely chopped
- 2 tomatoes, seeds removed, diced
- 3 limes, juiced
- salt
- pepper
- olive oil
- handful cilantro, chopped
- a few dashes of Cholula, or other hot sauce

Mix all ingredients together, seasoning with the salt and pepper to taste.  To serve, I put out spoons with individual bites of ceviche on them.  I've also sliced cucumbers and used the slices like crackers, topping them with the ceviche.
