Sweet Potato Casserole

This is absolutely one of my favorite things on the holiday table.  It's like having dessert with your meal.  As a kid, I used to HATE the marshmallow sweet potato goo passed around.  This is so different and delicious.

Sweet Potato Casserole


- 5 sweet potatoes
- pinch salt
- 1 tsp. vanilla extract
- 1/2 c. heavy cream
- 1/2 c. butter, cut into pea-size chunks
- 1 c. brown sugar
- 1 c. chopped pecans
- 2 T. flour

Preheat the oven to 350 degrees.

Pierce the sweet potatoes with a fork and bake for an hour.  Remove, and when they are cool enough to handle, peel the potatoes and roughly chop them.  Transfer the potatoes to a food processor and puree until fairly smooth.  Add in the cream and vanilla extract and a pinch of salt.  Pour the potatoes into a casserole dish.

In a small bowl, mix the flour, brown sugar, pecans and butter.  Pour the mixture evenly over the potato casserole.  Bake in the oven for 30-35 minutes.
