Bulgur Wheat Salad

I sit next to a vegetarian in my office, and she inspires me to try and include more vegetarian dishes in my diet.  Every time she comes back from the cafeteria with some great-smelling cous cous or noodles, I wonder how my foodie self only managed to navigate the salad bar.  Here's to her:

Bulgur Wheat Salad


- 1/2 c. of bulgur wheat, prepared according to package instructions (usually 12-15 minutes)
- 2 radishes, diced
- 1 rib celery, diced
- 1/4 red onion, diced
- handful of flat-leaf parsley, chopped
- 4-5 cherry tomatoes, quartered
- 1 lime, zested and juiced
- splash red wine vinegar
- 1/4 c. olive oil
- salt
- pepper

In the bottom of a bowl, whisk together the lime zest and juice, vinegar, a pinch of salt and pepper, and the olive oil.  Add in the rest of the ingredients and stir to combine.  Great for a light lunch or supper, possibly with a soup or salad, or serve it as a side dish with a light fish entree.
