Spicy Turkey Meatloaf with Red Pepper Glaze

Oh, how I heart cold weather!  I've made uber-unhealthy meatloaves in the past, and while they're really great... who can afford to give up all of those calories every single day over the holidays?  Plus, I really wanted to use the new loaf pan I bought thanks to a dirty online kitchenware shopping habit.

Spicy Turkey Meatloaf with Red Pepper Glaze


Ingredients for the meatloaf:

- 1 lb. of ground turkey
- 1/4 c. ketchup
- 2 T. worstershire
- 1/4 yellow onion, grated
- 1 egg, beaten
- salt
- pepper
- drizzle olive oil
- 2 pieces of bread, cubed
- 3 T. milk
- 6 sprigs thyme, leaves picked and chopped
- 2 garlic cloves, minced
- a few splashes of your favorite hot sauce

Ingredients for the glaze:

- 1/2 of a yellow onion, chopped
- 1/2 Italian chili pepper, diced
- 1 small red bell pepper, chopped
- 1 garlic clove, minced
- 1/2 c. chicken stock
- 1 1/2 T. tomato paste
- salt
- pepper
- olive oil

Mix all of the ingredients for the meatloaf together by hand.  Spray the loaf pan with cooking spray and press the meatloaf into the pan.

Preheat the oven to 375 degrees.

In a medium saucepan, heat 1 T. of olive oil and add the onion and peppers.  Season with salt and cook for 7-8 minutes.  Add the garlic and tomato paste.  Stir to combine and add the black pepper and stock.  Simmer for 6-7 minutes.  Transfer to a blender and blend until smooth.  Pour over the meatloaf.  Cover the pan loosely with tin foil.

Bake for 45 minutes, then remove the tin foil and bake for an additional 15 minutes.

I served my meatloaf with a crisp green salad lightly dressed with lemon juice and oil, but feel free to roast some vegetables or have traditional mashed potatoes.  Yums.
