Grilled Halibut and Glazed Baby Carrots

Since I think I ate my body weight in hummus earlier today, tonight is definitely a light meal.  Easy, too!

Grilled Halibut and Glazed Baby Carrots


Ingredients:

- One halibut filet, approximately 8 oz.
- handful of baby carrots
- 2 T. brown sugar
- 1/4 c. honey
- 1/4 c. apple cider vinegar
- salt
- pepper
- olive oil
- 1/2 lemon, juiced

Preheat a grill pan and a small skillet.  Peel the baby carrots and cut off the excess leafy green parts.  Drizzle the fish with olive oil and season it with salt and pepper.

Put the halibut on the grill and let it cook through; about 4 minutes per side.  Heat the vinegar and honey in the skillet.  Whisk in the brown sugar and a pinch of salt, and add in the carrots.  Let them cook until they are tender; about 5-6 minutes.  Plate the carrots and fish and squeeze the lemon juice over the top.  Dig in!
