Avocado and Mushroom Pita Sandwich

I'm covering for someone tonight, so my cooking needs to be portable since I'll be working hours on end tonight.  So, lunch got made early this morning and packed to go.

Avocado and Mushroom Pita Sandwich


- 1 whole wheat pita, cut in half
- 1/2 avocado
- 1/4 c. Greek yogurt
- 5 button or baby bella mushrooms, sliced
- 1/2 c. arugula or other greens
- 1/2 roma tomato, sliced
- a few slices of red onion
- 1/2 lime, juiced
- 1 T. olive oil
- salt
- pepper

Heat the olive oil in a small pan.  Add the mushrooms and cook for 3-4 minutes while they brown.  Season with salt and pepper and cook another 2-3 minutes.

Meanwhile, combine the avocado, lime juice, and yogurt.  Season with salt and pepper.  Open up the pita halves and generously spread 1/4 of the avocado mixture in each half.  You will have some of the spread leftover for another day.  Add in the greens, tomato, onion, and mushrooms.  Pack it to go!
