Tzatziki Style Salad

Yep... I'm still on my latest obsessive kick with Greek yogurt.  I just can't get enough of this stuff!

Tzatziki Style Salad


Ingredients:

- 1/2 cucumber
- 1/2 roma tomato, cut into 1/2-in. pieces
- 6-8 kalmata olives, halved
- 1/8 of a red onion, thinly sliced
- 1/2 lemon, juiced
- 1/4 c. Greek yogurt
- 1 garlic clove, minced
- 1 T. of fresh dill, chopped
- salt
- pepper
- 1 piece of whole wheat pita bread

Cut the cucumber in half lengthwise.  Using a spoon, scrape out the seeds from the middle.  Use a carrot peeler to remove the majority of the peel-- I like to make stripes down the sides.  Thinly slice the cucumber.  In a bowl, combine the cucumber, tomato, onion, and olives.

In a small bowl, combine the yogurt, lemon juice, garlic, and dill.  Season with salt and pepper and scoop it onto the top of the salad.  Serve with a piece of pita bread.
