Baked Fish with Indian-spiced Tomatoes

This is definitely something to make while you do normal household chores after a day at work.  Have laundry to do while you cook?  This is perfect.  A few simple steps, and your dinner is started while you finish things that help you get your life in order - trust me, I need meals like this!

Baked Fish with Indian-spiced Tomatoes


- 1 basa fillet
- pinch each of cumin, coriander, cayenne, paprika
- 2 roma tomatoes
- 1/2 leek, sliced
- 1/4 red bell pepper, sliced
- 1 lemon, juiced
- 1 garlic clove, minced
- 1/4-in. piece of ginger, grated
- salt
- pepper

Preheat the oven to 400 degrees.

Halve the tomatoes and season them with the cumin, coriander, paprika, and cayenne.  Add a pinch of salt and pepper and arrange the tomatoes on a wire rack placed on a cooking sheet.  Drizzle them with olive oil and place the sheet in the oven.

In a shallow baking dish, layer the leek and pepper.  Add the ginger and garlic and stir to combine.  Season the fish with salt and pepper and place on top of the leek/pepper mixture.  Add the pan to the oven for the last 20-25 minutes of cooking for the tomatoes.

Plate the fish and leek mixture with the tomatoes alongside.  Squeeze the lemon over the entire dish.
