Cod with Garlic Broth and Noodles

And I'm back!  Always nice to get back in my own kitchen after a week of eating lackluster restaurant food.  At first I was thinking that I wanted to go with all Asian flavors, but I decided to just make a nice garlicky broth.

Cod with Garlic Broth and Noodles


- 1 cod fillet
- 1/4 c. angel hair pasta or other thin noodles
- 5 1/2 shallot, minced
- 2 garlic cloves, minced
- 1 c. of seafood stock (you can substitute chicken or vegetable stock)
- 4 button mushrooms, quartered
- 4 cherry tomatoes, halved
- 1/2 T. soy sauce
- 1 scallion, sliced
- salt
- pepper
- pinch of crushed red pepper
- olive oil
- 1/2 lemon, juiced

In a small pot, heat a few turns of the pan of olive oil.  Add the shallot and let it cook for 3 minutes.  Add in the garlic and red pepper and stir for another minute.  Add in the mushrooms and cook for another minute; until the mushrooms start to color.  Add in the soy sauce and broth and raise the heat to bring it to a boil.

As the broth is heating, season the cod with salt and pepper.  Heat olive oil in another skillet.  Add the fish and cook it for 2-3 minutes on each side to get a sear on the fish.  Add a splash of the stock to the pan and partially cover.  Cook the fish for another 8 minutes.

Add the noodles to the broth and stir.  Cook for 3 minutes or until the noodles are tender.  Plate the noodles and broth and lay the cod on top.  Squeeze the lemon juice over the fish and garnish with the scallions.
