Summer Pea Tortellini with Herb Butter

I wasn't planning on making peas this week, but they looked so lovely at the market that I couldn't help myself.  Now, I have to find some way to use them up, because I hate it when I buy produce and it spoils.  You can definitely make your own pasta dough here, but it's been a long day, so I took the cheaters' route and used wonton wrappers.  This recipe will make more than one serving, but you can freeze them and boil them directly from the freezer.  Make sure you freeze the extra on a cookie sheet before putting them in a plastic storage bag, or they will all stick together.

Summer Pea Tortellini with Herb Butter


Ingredients:

- 1/4 yellow onion, diced
- 1 garlic clove, minced
- pinch crushed red pepper
- 1 1/2 c. fresh summer peas, shelled
- splash of vegetable stock
- 12-18 wonton wrappers
- salt
- pepper
- olive oil
- 3 T. of butter
- handful of cilantro and mint, chopped

Heat 1 T. of olive oil in a small pot.  Add the onion and season with salt.  Let the onion soften for 6-7 minutes.  Add the garlic and red pepper and stir for another minute.  Add in the peas and stock, seasoning with salt and pepper.  Let the mixture simmer for 3-4 minutes.  Transfer the mixture to a food processor and pulse until smooth.  Cool the mixture completely.

Set up a station with wonton wrappers laid out and a small bowl of water.  Spoon 1/2 tsp. of the pea mixture into the center of each wonton wrapper.  Brush all of the sides with water.  Fold it over into a triangle and pinch closed all of the sides.  Bring the two sides at the base of the triangle into the middle and pinch them together to create an envelope presentation.



Bring a pot of water to a boil and season it with salt.  Drop the tortellini into the water and let them cook for 2-3 minutes.

While the pasta cooks, heat the butter in a small sauce pan.  Season with salt and let it brown.  Remove the tortellini from the water, reserving a little bit of the cooking water.

Add the reserved water and herbs to the butter.  Stir to combine and add in the tortellini.  Bathe the tortellini in the butter and plate.
