The Recipes


This is a broken noodle dish that can be cooked in a paella pan, of which I don't have one.  I used a small skillet and it turned out just fine.



- 1/3 c. angel hair pasta, broken into large pieces
- 1/6 yellow onion, diced
- handful of mixed mushrooms, stemmed and sliced
- 1/4 bell pepper, diced
- handful of green beans, cut into 1/2-in. pieces
- 1 garlic clove, minced
- 1 T. tomato paste
- 1/4 c. crushed tomatoes
- 1/4 c. vegetable stock
- 1 T. paprika
- pinch of saffron threads
- salt
- pepper
- 2 T. of olive oil

In a small skillet, heat one T. of olive oil.  Add the broken pasta and allow it to toast and turn brown.  It should start to smell fairly nutty after 3-4 minutes.  Remove the pasta to a paper towel-lined plate.

Add the other tablespoon of oil to the skillet.  Add the onions and peppers, season with salt, and let them cook for 6-7 minutes.  Stir in the garlic for another minute.  Add in the mushrooms and green beans and stir.  Let the mixture cook for another 3-4 minutes.  Add in the tomato paste and stir for a minute.  Next, add the paprika and tomatoes.  Season lightly with salt and pepper.  Finally, add the stock and saffron.  Cover partially and simmer for 7 minutes.

Heat your oven to broil.  Top the pan with the toasted pasta and broil for 2-3 minutes, keeping careful watch as the pasta will burn quickly.  Serve in the pan, or transfer to a plate.
