Roasted Summer Vegetables

This was a side dish I prepared for a big dinner for friends, but could easily be a main course just for you.  Just make some quinoa or pasta and dinner is served.

Roasted Summer Vegetables


- 1 Mediterraean squash, cut into half-moons
- 3 spring onions, cut into slices
- 1 bulb of fennel, cored and sliced
- salt
- pepper
- olive oil

Preheat the oven to 350 degrees.

Scatter the vegetables over a cookie sheet.  Drizzle them with olive oil and season with salt and pepper.  Roast in the oven for 45 minutes.  That's it!  Easiest dish ever.
