Spinach Dip

Warning: DO NOT EAT ALONE.  Well, maybe you have more self-control than I do.  I just know I have to bring this over to a friend's house... and leave the leftovers, or I am at risk of eating the ENTIRE dish, which should serve a party full of people

Spinach Dip


- 2 boxes of frozen chopped spinach
- 2 c. sour cream
- 2 c. grated pepperjack cheese
- 1 T. crushed red pepper
- 1 package of dried ranch dressing mix (shocking for me, I know!)
- 1/2 c. grated parmesan
- salt
- pepper

Preheat the oven to 350 degrees.

Defrost the spinach and drain all excess water.  In a large bowl, combine all ingredients.  Spread into an oven-safe dish.  Cover and bake for 30 minutes.  Remove the cover and sprinkle with the parmesan.  Return to the oven for another 5-10 minutes, or until brown and bubbly.
