Turkey Larb

Only a few more days, and then I'm going to have to leave you all for a whole month!  I'm not sure what the extended stay hotel I'll be at will truly offer in the way of a kitchen, or in all honesty, how often I'll be home before 10 at night (from work, people, from work!), so there might be a few posts, but these are my final days before heading out of town on the 9th for the duration of the election cycle.

Turkey Larb

Ingredients:

- 1/2 lb. ground turkey
- 1 T. fish sauce
- 1 T. sambal olek
- 1 T. rice powder (available in Asian markets - you can omit if you'd like)
- 1 T. soy sauce
- 1/4 small onion, diced
- handful of cilantro, chopped
- 1 T. vegetable oil
- bibb lettuce leaves, kept in tact

Heat the oil in a large skillet.  Add the turkey and let it brown.  Start to break it up with a wooden spoon.  Once the turkey is brown, add in the shallot and cook for another 2-3 minutes.  Stir in the remainder of the ingredients except the cilantro.  Once everything is combined, add in the cilantro at the last minute.  Spoon the larb into a bowl and serve the lettuce alongside so that you can make your own lettuce cups.
