Summer Squash Pasta Salad

The beauty of late summer squash and zucchini is that they're gorgeous.  The drawback is the fact that they're huge!  This was a great way to use up some of the big guys that I brought home from the farmer's market.  Somehow, the funky weather allowed me to find some great zucchini and squash this late in the year - a welcome discovery after being at a hotel for work for the better parts of the last two weeks.

Summer Squash Pasta Salad


- 1/2 c. orecchiette pasta
- 1/2 c. of diced summer squash and/or zucchini
- 1/6 small red onion, diced
- 3 sun-dried tomatoes in oil, diced
- handful of parsley, chopped
- small handful of mint, chopped
- 1 T. dijon mustard
- 1 T. white wine vinegar
- 2 T. olive oil
- salt
- pepper

Prepare the pasta according to package instructions.  Cool completely.

While the pasta cools, whisk together the mustard and vinegar.  Slowly whisk in the olive oil and season with salt and pepper.

Add the pasta and other ingredients to the bowl and toss to coat.  Serve as a side or light entree.
