Chicken Salad Sandwich

I want to use up the leftover chicken from last night sooner rather than later, so I had to make something that would be a little bit of a departure from last night's tacos.  We're still in the sandwich kind of family, but this was a good use-up of leftovers.

Chicken Salad Sandwich


- 1/2 c. shredded chicken
- 2 T. mayonnaise
- 2 T. dijon mustard
- 1 anaheim pepper, diced
- 1 celery rib, diced
- 2 scallions, diced
- 3 sun-dried tomatoes in oil
-  salt
- pepper
- 2 slices of crusty bread (I had some that I made in a breadmaker)

Toast the bread.  While the bread is toasting, finely chop the sun-dried tomatoes and mix them with 1 tsp. of the mayonnaise.  Mix together the remaining ingredients.

Spread the tomato mixture on one side of the bread.  Scoop the chicken mixture onto the bread, slice, and serve.
