Tilapia with Cucumber Salad

It's so good to be back in my kitchen!  I hope you guys missed me making you hungry every single day with new ideas of what you can cook tonight.

I'm back from CA, and while it was a good trip work-wise and wonderful trip personal-wise, it's nice to be back in my own kitchen.  Being in CA reminded me of how amazingly available, affordable, and high-quality the seafood is out there.  Making fish tonight to help me transition back to the east coast for the winter months ahead.

Tilapia with Cucumber Salad


- 1 tilapia fillet
- 2 radishes, sliced
- 2-in. piece of English cucumber, sliced
- 2 T. red onion, sliced
- handful of fresh herbs, chopped
- 1 T. vinegar (I used a champagne vinegar)
- salt
- pepper
- olive oil
- 1/2 lemon, sliced
- 1 T. of flavored olive oil if you have it; if not, just more olive oil

Preheat the oven to 350 degrees.

Season the tilapia with salt and pepper.  Lay the tilapia on a baking sheet or oven-safe dish.  Drizzle with olive oil and top with the lemon slices.  Bake in the oven for 18-20 minutes.

Meanwhile, whisk together the vinegar and drizzle in the olive oil.  Add in the herbs, onion, cucumber and radishes.  Season with salt and pepper.

Plate the tilapia.  Discard the lemon slices if you prefer.  Top with the cucumber salad.  Welcome back, everyone.
