Amaretto French Toast

No matter what you did yesterday, doesn't being lazy and piling on another comforting meal sound good?  And doesn't more booze sound good?  Sounds amazing to me.  So put your feet up, laze around with a cup of coffee in one hand and a mimosa in the other, and when you're good and ready, start breakfast.

To be honest, I rolled out of bed pretty darn late and wish I could say I went for a long walk after reading the newspaper, but I basically just moved from bed to couch and couldn't be bothered to do anything until about 12:30.

Amaretto French Toast


- 2 slices of hearty bread (I am actually using up some bread I made in a bread maker)
- 1 egg, beaten
- 1 tsp. cinnamon
- 1/4 c. amaretto
- 1/4 c. pure maple syrup
- 1 T. butter
- olive oil
- powdered sugar for dusting

Heat a skillet and add a drizzle of olive oil and the butter.  Meanwhile, splash a little bit of the amaretto into the egg in a shallow bowl and whisk in the cinnamon.

In a small pot, add the rest of the amaretto and syrup.  Let it heat and reduce while you make the toast.

When the skillet is hot, dredge the bread thoroughly in the egg mixture.  Add it to the hot skillet and let it cook for 2-3 minutes per side over medium heat.  Once a light brown crust forms, your toast is done.

Plate the toast and drizzle with the syrup.  Finish with the powdered sugar.

Simple yet satisfying after you cooked for days for Thanksgiving.
