Spiced Cranberry Sauce

To round out your holiday experience, here is an update on what is often a holiday afterthought.  The leftovers can be used to make a great syrup (puree it in a blender with some additional juice).  I promise this will change your mind about cranberry sauce.  This was made for two people, so multiply accordingly.

Spiced Cranberry Sauce


- 1 c. fresh cranberries
- 1/2 jalapeno
- 3 T. sugar
- 1 orange, zested and juiced
- pinch salt
- 3-4 sprigs mint, leaves picked and chopped

Combine all ingredients except the mint in a small saucepan.  Add water if needed to loosen everything up.  Let it simmer for 15 minutes.  Remove the jalapeno.  Add the mint and simmer another 2-3 minutes.  Mash everything together with a potato masher.  Serve with your favorite holiday meats and sides... and use it tomorrow for something fun!
