Turkey Waldorf Salad

I still have some of the wonderful, moist turkey breast left from roasting it earlier this week.  Here's one more way to keep enjoying that bird.  Scoop it on crackers or salad greens, onto bread or pita, or just eat it as is.



Turkey Waldorf Salad

Ingredients:

- 1/2 c. diced turkey
- 1/2 apple, diced
- 1 celery rib, diced
- 2 T. spiced nuts, chopped (or any nut of your choice)
- handful of raisins
- 4 sprigs of mint, chopped
- 1 lemon, juiced
- 1/2 tsp. cardamom
- 1/4 c. Greek yogurt
- salt
- pepper

Bring a cup of water to a boil.  Cover the raisins with the water and let them plump while you chop everything up.

Drain the raisins.  Mix together all ingredients, seasoning with salt and pepper last.  That's it.  Serve it up however you like.
