Turkey with Spinach and Egg

I'm always looking for different things to do with leftover turkey and chicken.  This came out pretty well and would work for breakfast, lunch or dinner.  Make a big batch and have some friends over - they're that easy.

Turkey with Spinach and Egg


- Leftover sliced turkey
- 1 c. frozen spinach, thawed and liquid removed
- splash milk
- 1 garlic clove, minced
- pinch red pepper
- a few grates of nutmeg
- salt
- pepper
- 1 egg

Preheat the oven to 350 degrees.

Butter or spray individual ramekins or baking dishes.  Layer in leftover turkey.

In a small pot, mix together the spinach, milk, garlic, red pepper and nutmeg.  Season with salt and pepper.  Once it is warmed through, spoon the spinach over the turkey.  Crack the egg on top.  Top the egg with some salt and pepper.

Transfer to the oven and bake for 15-20 minutes or until the egg white is no longer translucent.
