Crab Cocktail

Yes, it's a chain restaurant, but I love the crabtini at Ruth's Chris Steakhouse.  The rest of their menu doesn't do much for me, but crab meat in a remoulade?  Oh, okay then.  I think I can handle that.

Crab Cocktail


- 1/2 c. crab meat, picked over
- 1/4 c. mayonnaise
- 1/2 shallot, finely chopped
- 1 tsp. dijon mustard
- 1 tsp. capers, chopped
- 1 lemon, juiced
- pinch cayenne
- pinch paprika
- dash Worstershire
- 4 chives, finely diced
- salt
- pepper
- small handful of arugula

Mix together the mayo, shallot, dijon, capers, lemon juice, cayenne, paprika, Worstershire and chives.  Season with salt and pepper.

Rinse and dry the arugula and push it into the bottom of a martini glass or other clear dish.  Add the crab meat to the remoulade and stir to combine.  Spoon it over the arugula and serve.
