Gnudi Sandwich

Okay, so recover from healthy eating with this dish.  It's not really healthy, other than being vegetarian, but it's mighty tasty.  It's a great use up of leftover gnudi and tomato sauce.  Plus, don't you always have either leftover hotdog buns or hotdogs?  While not totally figure-friendly, this sandwich is completely budget-friendly.


Pasta Samich

Ingredients:

- 2 gnudi
- 1/4 c. tomato sauce
- 1 radish, thinly sliced
- 1 hot dog bun
- 3-4 leaves of Bibb lettuce
- salt

Bring a large pot of water to a boil.  Season the water liberally with salt.  Drop in the gnuddi.

Drizzle the bun with olive oil  Put the hot dog bun in a toaster oven.

Meanwhile, heat the sauce in a small pot.

Take out the bun and lay the lettuce on the bun.  Spoon the gnuddi onto the bun once they have floated and cooked for 1-2 minutes longer.  Spoon the tomato sauce onto the sandwich and finish with radishes.
