Honey-Glazed Salmon with Lentils

Yes, salmon and lentils can tend to be a traditional combination.  But I think you'll find the play on the glaze for the salmon a nice little pick-me-up.  Nice and healthy if you made the mistake of making some kind of silly "get in shape" resolution.

Honey-Glazed Salmon with Lentils


- 1 salmon fillet
- 3 T. honey
- 1 tsp. cayenne pepper
- 1 sprig of rosemary
- 1/4 c. red lentils
- 1/2 carrot
- 1 garlic clove, smashed
- 1/2 celery rib
- 1/6 onion
- 1 cinnamon stick

Preheat the oven to 350 degrees.

In a small pot, let the honey start to simmer over low heat.  Add the rosemary and cayenne and let it simmer while the lentils cook.

Combine the lentils and 1 c. of water in a pot.  Toss in the cinnamon, celery, carrot, onion and garlic.  Bring the pot to a boil, reduce to a simmer, cover and let it simmer for 25-30 minutes.

Season the salmon with salt and pepper and put it in an oven-safe dish.  Discard the rosemary and pour the honey over the top, reserving a little bit to finish with.  Bake in the oven for approximately 20 minutes.

Drain the lentils and discard the cinnamon, onion, celery, carrot and garlic.  Season with salt and pepper.  Plate the lentils.  Slide the salmon on top, drizzling the remaining honey over the salmon and onto the lentils.
