Steamed Fish with Mushrooms

I can't believe this never occurred to me before.  Steamed fish is super-healthy and right up my alley.  Extra pasta pot?  Or even just the one you have?  This dish is a cinch.  You can also rest any pie pan on top of a skillet that will allow for space between the boiling water and cooking vessel.

Steamed Fish with Mushrooms


- 3 T. thinly sliced onions
- 1/4 c. sliced mushrooms
- 1 tilapia fillet
- 1/2 lemon, juiced
- 1 tsp. Herbs de Provence
- 1 T. capers
- salt
- pepper
- drizzle olive oil
- a few sprigs of oregano, torn for garnish

In the steamer basket, layer the onions in the center.  Scatter the mushrooms alongside.  Drizzle lightly with oil and season with the Herbs de Provence, salt and pepper.  Separately season the fish with olive oil, salt and pepper and lay it on top of the onions.  Scatter the capers over the top.  Bring an inch or two of water in the bottom of the pot.  Place the basket in, cover, and let the fish steam for 10-13 minutes.

Plate the fish and garnish with the oregano and lemon juice.
