Crab and Smoked Salmon Bites

You can definitely make your own crackers for this or slice bread, but I say take your favorite snack cracker and put it on top.  Ritz, Triscuit, Wheat Thins... whatever you like, it doesn't matter.  The loveliness of the ingredients combined with your favorite crackers might just be perfect.  It was also nice to come home from my second job after a very long day and have something decadent yet still healthy with a glass of wine.

Crab and Smoked Salmon Bites


- 1/2 c. crab meat
- 1/4 green bell pepper, finely diced
- 2 or 3 slices of smoked salmon
- 1 scallion, white and green parts, chopped
- 1 T. mayonnaise
- 2 T. Greek yogurt
- 1/2 lemon, juiced
- handful of cilantro, chopped
- salt
- pepper
- handful of your favorite crackers
- 2-3 chives, cut into fourths

Combine everything other than the salmon and crackers in a bowl.  Stir to combine, seasoning with salt and pepper to taste.  Cut the salmon into bite-size pieces.

On each cracker, fold a small slice of salmon.  Top with the crab and garnish with the chives
