Creamy Crab Soup

Now, I know I could Google or Wiki this, but I'm pretty sure this classifies as a She Crab Soup since I used Sherry Wine in it.  That would make sense, right?   No matter what it is, it's yummy and comforting.  This will be one VERY hearty portion if you serve it with a salad or bread, or easy to break into two portions and a lovely starter for Valentine's Day!

Creamy Crab Soup


- 1/4 c. yellow onion, diced
- 1 T. butter
- 1 T. flour
- 1 c. seafood, chicken or vegetable stock
- 1 c. milk
- 1/2 c. crab meat, picked through to remove any shells
- 1 tsp. paprika
- 1 tsp. Old Bay seasoning
- 1 tsp. sherry wine vinegar
- 2 chives, chopped for garnish
- salt
- white pepper

Melt the butter in a large pot.  Add the onion, season with salt, and let them soften for five minutes.  Sprinkle in the flour and stir to combine.  Once thickened, add in the stock.  Let it cook for 2-3 minutes, season again with salt and pepper, then add in the milk.  Stir to combine and cook over medium low heat for 15 minutes.

Stir in the paprika, Old Bay, and crab meat.  Let it cook another 5-7 minutes.  Ladle into a bowl and garnish with the chives and drizzle the sherry wine vinegar over the top.
