Fruit Cocktail

Did you eat fruit cocktail as a kid?  That mix of maraschino cherries, pears, etc. in a can?  This is like a grownup version of that fruit cocktail.  Feel free to substitute whatever fruit you have on hand, but go for a variety of colors.

Also, note that I made extra of the syrup to use in cocktails.



Fruit Cocktail

Ingredients:

- 1/2 c. sugar
- 1 c. water
- 1/2 vanilla bean, split down the side and seeds scraped out
- 1/2 orange peel
- a few grates of fresh ginger
- 1 kiwi, peeled and diced
- 1 orange, segmented
- 1 tangerine, segmented
- handful of blackberries

Combine the sugar, water, vanilla bean seeds, orange peel, ginger, and vanilla pod in a small pot.  Let it simmer for 20 minutes.  The easiest way to get the orange peel is to use a vegetable peeler.

While it simmers, cut your fruit and arrange in a dish.

Remove the simple syrup from the heat and discard the orange peel and vanilla bean pod.  Let it cool.  Pour it over the fruit, cover, and refrigerate overnight.
