Green Scallop Ceviche Bites

I made this as an appetizer for 4-5 people, meant to be a nice bite along with several other appetizers while we had a full day of cooking and eating.  This amount would be great as an appetizer for two, or just as an afternoon snack or to make a lunch out of for one.

Green Scallop Ceviche Bites


- 4 large scallops, cut into small dice
- 1 jalapeno, finely diced, seeds and ribs removed
- 1/4 small red onion, finely diced
- handful of cilantro, chopped
- several shakes of your favorite hot sauce
- 3 limes, juiced
- 2 tomatillos, rinsed and diced
- salt
- pepper
- olive oil

Combine the scallop, jalapeno, onion, tomatillo, cilantro, hot sauce and lime juice.  Season with salt and pepper and add a drizzle of olive oil.  Store in the refrigerator for 24 hours to let the citrus "cook" the fish.  Serve on spoons topped with a few pieces of avocado, or in a bowl with tortilla chips.  I have also sliced cucumbers and spooned the ceviche on top in another variation.
