Snowboarding Burrito

Okay... I live in D.C.  It's not like I'm going snowboarding today.  However, recent Facebook posts have made me think of how fun it was to load up gear on the top of a friend's awesome truck at 6 am and make breakfast burritos to go.  I mean, if we didn't, we just stopped by the McDonald's on the way to Bear Mountain for those weird sandwiches with syrup in the middle or forged onward for some other kind of egg-bread-meat-cheese fast-food concoction.

I might have needed the bathroom on one of those stops, necessitating breakfast sandwich purchases.  Thankfully, there was snow and bloody marys in our near future, and in honor of a trip to Breckenridge, CO tomorrow, I figured I'd make myself a hearty meal to prepare me for the mountain.



Snowboarding Burrito

Ingredients:

- 1 10-in. tortilla
- 1 or 1 1/2 eggs (if you're making more than one)
- 1 slice bacon, crisped in either the microwave or oven
- 2 T. of black beans, rinsed and drained (or in my case, beans and rice I had leftover)
- cilantro, chopped
- splash of milk
- a few dashes of hot sauce
- 1/4 c. cheddar cheese, or Mexican mixed shredded cheese
- salt
- pepper
- 1 T. blended oil

Heat the oil in a small skillet.  Mix the eggs with the milk and season with salt and pepper.  Add the eggs and cook, scrambling until cooked through.  Add 1/2 of the cheese to the eggs and let it melt.

Heat the tortilla briefly in the microwave for 20-30 seconds just to make it pliable.  Pile the eggs into the center of the tortilla, continuing with the remaining ingredients.  Roll up from the long side first, folding in the sides as you go.

If you're getting in the car to go snowboarding, wrap it in foil, then cut in half.  Or, just cut it and enjoy your weekend.
