Tilapia with Dijon Honey Sauce

The beautiful thing about this dish is that you can use up just about anything you have lying around as a side.  The flavors are great, but they marry well with anything from potatoes to a salad to lentils or rice.  If you decide to roast the vegetables, you'll want to pop them in the oven about 20 minutes before the tilapia.  This is also one of those perfect midweek meals because it's so easy to get together.

Tilapia with Dijon Honey Sauce


- 1 tilapia fillet
- 1 T. dijon mustard
- 1 T. honey
- 1 T. Greek yogurt
- 1/2 lemon, juiced
- 2 chives, chopped or cut with kitchen shears
- side of your choosing
- salt
- pepper
- olive oil

Preheat the oven to 350.

Put the tilapia on a an oven-safe dish or piece of aluminum foil.  Season it with salt and pepper and drizzle with olive oil.  Transfer to the oven and bake for 12-14 minutes.

While the fish cooks, whisk together the mustard, honey, yogurt, lemon juice and chives.  Season with salt and pepper.

Plate the fish and your side.  Top with sauce and serve.
