Avocado Salad

Oh, the wonder that is D.C. happy hour.  On any given night, you are either obligated to go to some happy hour, or you have one of a thousand birthday dinners/going away drinks/celebration.  On Fridays, that tends to mean going directly from the office to said function, where if you're lucky, you get to eat a bite or two while getting nice and toasty on a couple of drinks.  Tonight, the food was actually in abundance and pretty good, so a nice light supper was just what I wanted when I came home.

Avocado Salad


- 1/2 avocado, sliced
- 2 radishes, sliced
- handful of parsley, chopped
- 1 lime, juiced
- 1 T. olive oil
- salt
- pepper

Juice the lime and slowly whisk in the olive oil until combined.  Season with salt and pepper.

Plate the avocado and top with the radishes and parsely.  Drizzle the vinaigrette over the top and season again with salt and pepper as desired.
