Crab-stuffed Peppers

A little while ago, I did an avocado-stuffed pepper as an appetizer for a friend's party.  Those were lovely, but damn if I don't love me some crab meat.  So, I had just about 1/4 c. of crab left and decided this would be the perfect little bite to whip up while I worked on something else... namely my mounting laundry.  It's amazing how much better household chores sound when you have a snack and a glass of wine on the table nearby.

Crab-stuffed Peppers


- 4-6 piquillo peppers, or other small sweet peppers
- dash hot sauce
- 1/2 jalapeno, grated
- handful of cilantro
- handful of parsley
- 1 garlic clove, grated or chopped
- 2 T. Greek yogurt
- salt
- pepper
- 1/4 c. crab meat

Combine the hot sauce, jalapeno, garlic, cilantro, parsley, and yogurt in a blender or food processor.  Blend to combine.  Season with salt and pepper.  Combine the crab meat with the blended mixture.  The herbs will make it fairly green.  Using a teaspoon, scoop it into the peppers.  That's it!  Now go do your laundry.
