Mediterranean Salmon Burgers

I am usually a burger purist.  When I want a burger, I want a burger.  However, a lady's waistline isn't exactly welcoming of burgers as often as I'd like to have them.  I've been successful recently making turkey burgers, so I figured why not give a salmon burger a chance?  Combine some great spice with a yummy sauce and I think you'll be adding this recipe to your arsenal.

Mediterranean Salmon Burgers


- 1 salmon fillet, 4-6 oz., finely diced
- 2 scallions, chopped
- 1 tsp. cayenne
- 1 tsp. cumin
- 1 tsp.coriander
- 2 small garlic cloves, minced
- 1/2 celery rib, diced
- 2 T. finely diced onion
- 2 T. bread crumbs
- 1 T. Greek yogurt
- 1 T. sour cream
- a few grates of fresh horseradish (you can substitute prepared)
- 1/2 lemon, zested
- 3 chives, chopped
- 2 T. chopped herbs; I used mint and cilantro
- 4 slices roma tomato
-  1 pita, cut in half
- 1/4 c. arugula
- salt
- pepper
- olive oil

In a small skillet, heat 1 T. of olive oil.  Add the celery and onion, season with salt, and let them soften for 4-5 minutes.  Add the garlic, stir for a minute, and remove from the heat.  Let it cool completely.

In a bowl, mix together the scallion and spices with another T. of olive oil.  Add in the salmon, bread crumbs, and cooled celery mixture.  Season with salt and pepper and mix gently with your hands.  Once thoroughly combined, form two patties.  You can make these ahead and refrigerate them if you like.

In another bowl, mix together the yogurt, sour cream, chives, herbs and horseradish.  Season with salt and pepper.

Heat 1 T. of olive oil in a skillet.  Gently add the salmon patties.  Cook for 2-3 minutes on the first side and 1-2 minutes on the second side.

While the salmon burgers cook, gently open up each pita pocket half.  Spoon half of the sour cream mixture into each one and spread it over the inside of the pita.  Add the arugula to each half and top with 2 slices of tomato.  When the salmon burgers are ready, slide one into each pita pocket.  Put the burgers on a plate and enjoy.
